A dialogue between the product and the diner. It is the premise with which Eskura hosts the most traditional Japanese cuisine in the Port of Bermeo. One bar and five diners. In front of her, José prepares each of the dishes live. A local product, a culinary technique based on respect, integrates the customer in a unique environment: a place where Bermeo is transformed, for a few moments, into a fishing village in Japan.

Eskura is a tribute to the fishing tradition of Bermeo, its terraces and its port. The product is the protagonist of a culinary session in which you can wear from your arrival at the restaurant until you stand in front of the diner in the bar.
Sitting in it allows you not to lose sight of any of the ingredients, any of the fish that have come from the port, or from the beef of the high of Sollube, which you have had to go through to get here. Eskura’s philosophy is honesty, respect for the environment, cooking and raw material.

«Omakase» means “trust” or “put oneself in the hands of the chef”. In Eskura, this experience is a gastronomic journey without a menu, where dish each is created at the moment to the according to inspiration of the chef and the seasonal excellence of the product.
Every visit is unique. No two menus are the same, because nature is not repeated either. What does remain is the respect for the product, the purified technique and the surprise in each bite.

Due to the characteristics of this service, which requires concentration, silence and a leisurely pace, it is not recommended for children under 18. We want to ensure a calm and respectful atmosphere, both for diners and for the chef’s work.

All dishes may have traces of sesame, or soybean, and glutamate-containing sodium. The wines and drinks can contain sulfites.

Five flavors, five colors, five senses, five cooking techniques and five key condiments for five diners. The five is the magic number in Japanese gastronomy, a number that is personified in the bar of Eskura.
After living in the first person the meaning and essence of Japan, José transfers the purism of Japanese gastronomy to the fishing town of Bermeo through his most personal project: Eskura.
Their passage through renowned restaurants and their experience has taken them to look for the essence of the “five” in of the snacks they offer.
